Whole leaf teas open up with each steep. The first is bold, the second more rounded, the third surprisingly sweet.

One of the most common mistakes people make with whole leaf tea is throwing it away after the first steep. This is like eating only the crust of a sourdough loaf.

First Steep: Use water at the temperature specified on your tea (typically 80–90°C). Steep for 2–3 minutes. This releases the brightest, most aromatic compounds — the “top notes” of the tea. This is the boldest, most characteristic cup.

Second Steep: Let the leaves rest for 60 seconds after draining. Add fresh water at the same temperature. Steep for 2–3 minutes. The body opens up further. You’ll notice the cup is softer, more rounded — often more complex than the first.

Third Steep: Rest again, then steep for 3–4 minutes. This is where the subtle sweetness lives. Many experienced drinkers consider this their favourite cup of the three.

Pro tip: Don’t squeeze or press the leaves — this releases bitterness. Let the water do the work.
