FROM LEAF TO CUP

How to brew your tea

A cup, whole leaves and a few minutes. Start with the instructions on your pouch, then adjust the strength to suit your taste.

YOUR FIRST CUP

Four steps to hot tea

  1. Measure the leaves

Use the quantity on your pouch. The blend guide below gives a starting point for a cup. A small scale helps you repeat a brew you enjoy.

  2. Choose your water temperature

Heat fresh water to the temperature recommended for your blend. A thermometer or temperature-controlled kettle helps. Avoid pouring boiling water straight onto delicate green tea leaves.

  3. Give the leaves room

Use a roomy strainer or teapot. Add the water and set a timer for the suggested first steep. Whole leaves expand as they brew.

  4. Strain and taste

Pour the tea off the leaves when the timer finishes. Taste it plain first. Next time, use a little less leaf or a shorter steep for a lighter cup; adjust gradually for a stronger one.

OVER ICE

Make an iced cup

Brew your tea with the recommended temperature and steep time, then strain it completely. Let it cool before pouring over ice. If the ice makes it too light, try slightly more leaf in your next brew rather than leaving the leaves in much longer.

Add lemon, mint or a little sweetener if you enjoy them. Taste the plain tea first so you can decide what it needs.

TRY THE LEAVES AGAIN

Make a second steep

Keep the drained leaves for another steep during the same tea session. Add fresh water at your blend’s recommended temperature. Taste as you go and adjust the steep time.

The second cup can taste different from the first. Stop when the leaves no longer give you a flavour you enjoy; the number of useful steeps varies.

If your cup tastes bitter

Try a shorter steep, slightly cooler water or less leaf. Change one thing at a time so you can tell what helped. Strain the tea fully instead of leaving the leaves in your cup.

All ten blends contain tea leaves and caffeine. Brewing changes the cup, but it does not make these teas caffeine-free.
