Brew the tea

Follow your Blue Flower Green Tea pack instructions. For one small drink, brew a measured portion in about 150ml of water, then strain and allow the tea to cool. Taste it plain before deciding whether to sweeten it.

Build the glass

Add ice to a glass, pour in the cooled tea and top with chilled sparkling water. Add a little lemon juice and stir gently. Taste, then add more citrus only if you want it. The exact proportions can follow your preferred strength.

Notice the colour

Butterfly pea pigments change with acidity, so lemon can shift the blue towards purple. The colour you see also depends on the tea concentration. Enjoy it as a tea-based drink; the green-tea blend still contains caffeine.
