Non-Alcoholic Botanical Whiskey & Rum Teas

Toasted oak, peat aromatics, cold-extracted botanicals — here's how Nevisan built the texture and finish of aged spirits into a tea with zero alcohol.

The Challenge

The market for non-alcoholic drinks has changed in the last few years. People aren't giving up alcohol because they have to — they're choosing not to drink, and they want something worth drinking in its place. Fruit juice doesn't cut it at 9pm. Neither does sparkling water.

The problem with recreating spirits in a non-alcoholic format is depth. Aged whiskey and rum get their character from years inside charred barrels. The wood breaks down slowly, donating vanillin, tannins, and specific smoky phenols that create the dry, complex finish you recognise. No amount of grape juice gets there.

The Approach

We approached it differently. Toasted oak wood and peat-smoke aromatics were cold-extracted into our whole-leaf Assam green tea base. Cold extraction preserves the aromatic compounds without releasing the bitter tannins that heat would pull out. Sugarcane botanicals added the caramel mid-note that rum carries. Whiskey got a different botanical profile — drier, with more wood-forward character.

The Result

The result is 0.0% ABV, no sugar, no artificial additives. Brew it hot and drink it from a heavy glass. Or brew it strong, let it cool, and pour it over a large ice sphere with a twist of lemon. It's the most honest evening ritual we know of — all the texture and ritual of a dram, none of the morning aftermath.
