The Ultimate Guide to Green Tea in India: From Leaf to Cup
Green tea has been part of Indian culture for decades, but most people in India still don't know what real green tea actually is. The market is flooded with flavored blends, bagged dust, and products labeled 'green tea' that contain barely any tea at all. This guide cuts through the noise.
**Where green tea is grown in India.** The primary green tea regions in India are Assam, Darjeeling, and Nilgiri. Assam produces bold, malty green teas with high antioxidant content. Darjeeling produces lighter, more delicate green teas with floral notes. Nilgiri produces medium-bodied teas with fruity undertones. At Nevisan, we source exclusively from our own garden in Golaghat, Assam — a region with some of India's finest tea-growing soil.
**How green tea is processed.** Green tea is made by preventing oxidation. After plucking, the leaves are either steamed (Japanese style) or pan-fired (Chinese style) to halt oxidation. Steaming preserves the grassy, vegetal flavor and maximizes EGCG antioxidants. Pan-firing creates a nuttier, more complex flavor. At Nevisan, we use a modified steaming process that preserves the natural character of the Assam leaf while maximizing antioxidant retention.
**What makes green tea healthy.** Green tea's health benefits come primarily from catechins — a type of polyphenol. The most powerful catechin is EGCG (epigallocatechin gallate), which has been extensively studied for its antioxidant, anti-inflammatory, and metabolism-boosting properties. A typical cup of whole-leaf green tea contains about 100mg of EGCG. That's significantly more than bagged tea, which loses most of its catechins during processing and storage.
**How to choose real green tea in India.** Look for these five signs: (1) The leaves should be whole rather than dust or fannings. (2) The color should be pale yellow to light green when brewed — not dark green or brown. (3) The smell should be grassy, fresh, and slightly sweet — not floral or fruity (those are artificial flavors). (4) The price should be at least ₹8-10 per gram for certified organic. Anything cheaper is almost certainly not real green tea. (5) Look for PGS-India or other recognized organic certification — not just a label that says 'natural' or 'pure'.
**How to brew green tea properly.** Most people brew green tea wrong. The water should be 75-80°C, never boiling. Boiling water scalds the leaves and releases tannins that make the tea bitter. Steep for 2 minutes, not 5. Use 1.5g per 200ml of water. And use whole-leaf tea, not tea bags. Whole leaves release flavor gradually and can be re-steeped 2-3 times, each cup revealing different notes.
**When to drink green tea.** The best time to drink green tea is between meals — 30 minutes before or after eating. Drinking it on an empty stomach can cause acidity for some people. Avoid drinking it with meals, as the tannins can inhibit iron absorption. For energy, drink it in the morning or early afternoon. For relaxation, drink it in the evening — the L-theanine in green tea promotes calm alertness without the jitters.
**Green tea vs other drinks.** Compared to coffee, green tea has about half the caffeine (25-35mg per cup vs 80-100mg in coffee) plus L-theanine, which smooths out the caffeine effect. Compared to black tea, green tea has more antioxidants because it's not oxidized. Compared to herbal teas, green tea has caffeine and EGCG — benefits that most herbal teas don't provide. Compared to soft drinks, green tea has zero sugar, zero calories, and actual health benefits.
**Common myths about green tea.** Myth 1: Green tea is a weight loss miracle drug. Reality: It can boost metabolism by 3-4%, but it's not a substitute for diet and exercise. Myth 2: More is better. Reality: 2-3 cups per day is optimal. More than that can cause liver issues in some people. Myth 3: All green teas are the same. Reality: Origin, processing, and leaf quality make a enormous difference. A ₹150 'green tea' and a ₹499 PGS-India certified whole-leaf tea are not the same product. Myth 4: Green tea detoxes your body. Reality: Your liver and kidneys detox your body. Green tea supports them with antioxidants, but it doesn't 'cleanse' anything.
**The Nevisan difference.** Most green teas in India are blends — leaves from dozens of gardens mixed together to keep the flavor consistent year-round. At Nevisan, we don't blend. Our tea comes from a single garden in Golaghat, Assam. It's whole-leaf, PGS-India certified organic, and processed to preserve the natural character of the leaf. No masking, no additives, no shortcuts. If you want to try real green tea, start with our [Organic Green Tea](https://nevisan.in/products/organic-green-tea) — it's the baseline against which all other green teas should be measured.
